Everything Pretzels with Garlic & Herb Cream Cheese Dip

In this week’s edition of game changing food mashups: Everything Pretzels! As if that wasn’t tempting enough, these guys are perfect alongside this warm, cheesy Herb & Garlic Cream Cheese Dip. Because of course nothing goes better with bagels than cream cheese!

For this recipe, I used Trader Joe’s ~*iconic*~ Everything But the Bagel Seasoning. However, if you don’t have a local TJ’s nearby, you can really easily make your own Everything Bagel seasoning! Check out the recipe notes for a link to a super easy Everything Bagel seasoning.

Pretzels are so much fun to make, and they’re such an impressive snack to bring to any potluck or party. Plus, they’re really easy to shape once you get the hang of it! If you’ve never shaped pretzels before, check out the tutorial below.

First, divide the dough into 8 equal pieces. Next, flatten the dough into a small rectangle, and then roll it lengthwise into a long cigar.

Next, pinch the seams along the cigar. Roll the dough out until it is between 16 to 20 inches long.

Grab the ends of the dough, cross, twist, and then fold over the ends of the dough, as seen above.

Use a bit of water to adhere the pieces of the pretzels together where it’s folded. Next, it’s time to boil the pretzels in the baking soda mixture that will give them their signature dark color and pretzel-y taste!

Once the pretzels have boiled, brush them with egg wash and generously sprinkle Everything Bagel seasoning over the pretzels.

Everything Pretzels with Garlic & Herb Cream Cheese Dip

Ingredients

Everything Pretzels

  • 1 packet active dry yeast or 2 ¼ teaspoons
  • 12 ounces beer such as a Lager or Pilsner
  • 1 tablespoon granulated white sugar
  • 2 teaspoons kosher salt
  • ¼ cup unsalted butter melted
  • 4 ½ cups all purpose flour
  • 1 egg beaten
  • cup baking soda
  • 10 cups water
  • 2-3 tablespoons Everything Bagel Seasoning or make your own (see Recipe notes)

Herbed Cream Cheese Dip

  • 8 ounces cream cheese room temperature
  • ½ cup shredded mozzarella cheese
  • ½ cup shredded white cheddar cheese
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon fresh chives chopped
  • 1 teaspoon dried oregano
  • 1 tablespoon fresh rosemary chopped
  • 1 teaspoon garlic powder
  • ¼ cup milk

Instructions

Pretzels

  • Warm beer in microwave until it is warm, but not hot, to the touch, or about 110°F.
  • Add sugar to warm beer, and stir to slightly combine. Sprinkle yeast into beer, and stir slightly. Let sit until mixture is bubbly and foamy, about 10 minutes.
  • Add yeast mixture, butter, salt, and 2 cups flour into the bowl of a standing mixer. Using a dough hook, mix on low, adding remaining flour 1 cup at a time, until the dough is mostly combined. Once the flour is mostly incorporated, turn speed to medium and knead until dough is smooth and no longer sticks to the sides of the bowl, about 5 minutes. Meanwhile, prepare a large bowl by spraying with unflavored baking spray or coating with vegetable oil.
  • Once dough is kneaded, add to the prepared bowl, flipping to ensure that the dough is covered with oil.
  • Cover and let rise in a warm place until dough has doubled in size, about 1 to 1 1/2 hours.
  • Preheat oven to 425°F. Prepare 2 large baking sheets by lining them with Silpat or parchment paper. Bring water and baking soda to boil over high heat in a large pot.
  • Divide risen dough into 8 equal pieces. Roll each piece into a cigar shaped log, and pinch the seam together. Next roll dough until it's about 16 inches long. Form each piece of dough into a pretzel shape. Place each formed pretzel onto a baking sheet until ready to boil.
  • Boil each pretzel in the baking soda water for 30 seconds, removing with a slotted spoon. Place boiled pretzels back on baking sheet.
  • Brush egg wash over pretzels, then sprinkle a generous amount of Everything Seasoning over all pretzels until they're well covered.
  • Bake for 12-15 minutes, or until pretzels are golden brown.
  • Let cool, and serve with Herbed Cream Cheese Dip.

Herbed Cream Cheese Dip

  • Preheat oven to 350°F.
  • In a medium bowl, stir together cream cheese, mozzarella, white cheddar, parsley, chives, oregano, rosemary, milk, and garlic powder in a medium bowl until smooth.
  • Transfer mixture to a small baking dish, and cook for 20 minutes, or until the dip is bubbling and golden brown.
  • Let cool slightly before serving.

Notes

  • You can use fresh or dried herbs for the cream cheese dip. If using fresh, use 1 tablespoon each. If using dried, use 1 teaspoon each. Feel free to use a combination of fresh and dried depending on what you have in your herb garden, fridge, and pantry!
  • If you can't find Everything Bagel Seasoning in the stores, you can easily make your own!
