Quiche is one of my all time favorite dishes! It’s so versatile, and there’s so much potential for fun flavor combinations. This vegetarian quiche is filled with roasted cauliflower, caramelized onions, and white cheddar cheese. It’s so flavorful and absolutely filled with veggies!
This vegetarian quiche requires a bit of prep work, but nothing too difficult! The most important bit of prep work is caramelizing the onions. If you’re never made caramelized onions before, don’t be intimidated! All it takes to make deliciously savory-sweet onions is a bit of sugar, salt, butter, heat, and time. It takes at least 30 minutes to make well caramelized onions, but most of that time isn’t active. Plus, once you see just how easy it is to make caramelized onions, you’ll want to make them all the time! Personally, I love making them to top veggie burgers, or even incorporating them into biscuits.

The caramelized onions and cauliflower can both be prepped in advance. When I make this quiche, I’ll prep the cauliflower and onions a few hours ahead, so all I have to do to make the quiche is combine all the ingredients and bake! Also, I will almost always use store bought pie crust, since it’s one thing I just never feel like making from scratch, but if you’d prefer to use home made feel free to sub it in!

Caramelized Onion, Roasted Cauliflower, and White Cheddar Quiche
Ingredients
- Pie crust for 9 inch pan homemade or store bought
- 6 large eggs
- 1 cup heavy cream
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1 small head cauliflower cut into 1/2 inch pieces
- Drizzle of olive oil
- 2 large yellow onions thinly sliced
- 2 tablespoons unsalted butter
- Generous pinch white sugar
- 1 cup white cheddar shredded
- Fresh chives chopped, for serving (optional)
Instructions
- Preheat oven to 425F.
- Caramelize the onions by melting butter in a large skillet over medium low heat. Add onions, and cook for 15 minutes, stirring occasionally. Add a generous pinch of both salt and sugar to the onions, and stir to combine. Continue cooking, stirring occasionally, for 15-25 minutes, or until onions are browned and caramelized.
- Meanwhile, place cauliflower on a parchment lined baking sheet. Lightly drizzle with olive oil, sprinkle salt over the cauliflower, and mix so that the cauliflower are evenly coated. Bake for 20 minutes, tossing halfway through. When cauliflower are finished roasting, remove from the baking sheet let cool. Lower oven temp to 350F for the quiche.
- Line 9 inch pie pan with pie crust. Press the crust into the pan, and crimp the edges with a fork or your fingers.
- Add eggs to a large bowl and beat slightly. Add heavy cream, cayenne pepper, and 1/2 teaspoon salt, and whisk to combine. Stir in cheese, caramelized onions, and roasted cauliflower.
- Pour the mixture into the pie pan.
- Bake at 350F for 45-50 minutes, or until the quiche is set and does not wiggle when shaken. If the crust starts to brown too much, put aluminum foil over the quiche to prevent more browning.
- Let the quiche stand for 10 minutes before slicing. Top with chopped chives if desired.
