Tofu Gyros
These delicious vegetarian dinner features spiced tofu, garlic yogurt, and veggie toppings.

Ingredients
- 14 ounce block extra firm tofu pressed to remove excess moisture
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon dried oregano
- 2 teaspoons cumin
- 2 teaspoons coriander
- 1 ½ teaspoon paprika
- 1 small cucumber
- 1 small tomato
- 2-3 large romaine lettuce leaves
- ½ cup plain Greek yogurt
- ½ lemon
- 2 cloves garlic
- Feta if desired
- 4 pitas or flatbreads
Instructions
- Preheat oven to 425°F. In a large bowl, crumble the tofu. Add olive oil, salt, garlic powder, onion powder, oregano, cumin, and coriander. Stir until the tofu is well coated in oil and spices. Spread the tofu evenly onto a large baking sheet.
- Bake the tofu until crispy and slightly browned, about 18-20 minutes.
- Meanwhile, chop the cucumber, tomato, and lettuce into chunks.
- Prepare the yogurt sauce by stirring together yogurt, juice from ½ lemon, and the garlic cloves, grated.
- Once the tofu is baked, assemble the gyros by spreading yogurt onto each flatbread, then topping with tofu, veggies, and feta if using.
