I’m in love with all things vanilla bean, and these pancakes are no exception! These pancakes are perfectly soft and fluffy with a delightful vanilla flavor. The best part is, they’re super easy to make!
For the vanilla bean in this recipe, you can either scrape the seeds out of a whole vanilla bean, or use vanilla paste. I cook with vanilla bean pretty frequently. Therefore, I always keep a jar of vanilla bean paste on hand. It’s quite a bit cheaper than buying whole vanilla beans at the grocery store, and it’s much easier to work with!
In my opinion, the key to making perfect pancakes is to ensure that you pan is well coated in butter at all times. Also, make sure to stir around the butter in the pan frequently so that it doesn’t burn. The butter will make your pancakes a beautiful golden brown, and as everyone knows butter makes everything taste better!

Vanilla Bean Buttermilk Pancakes
Ingredients
- 2 cups all purpose flour
- 2 tablespoon granulated white sugar
- 1/2 teaspoon salt
- 2 teaspoon baking powder
- 1 teaspoon baking soda
- 2 eggs
- 2 cups buttermilk
- 1 teaspoon vanilla extract
- 1 vanilla bean or 1 teaspoon vanilla bean paste
- 4 tablespoon unsalted butter melted
Instructions
- In a large bowl, whisk together flour, sugar, salt, baking powder, and baking soda. Set aside.
- In a medium bowl, add eggs and beat them slightly. Add buttermilk, vanilla extract, seeds from vanilla bean or vanilla bean paste, and melted butter and whisk to combine.
- Add wet ingredients to dry ingredients and mix until the batter is mostly smooth, with only small bits of flour remaining. Be sure not to overmix the batter.
- Meanwhile, heat a griddle or skillet over medium heat. Melt butter into skillet or spray with baking spray, adding more as the pancakes cook to make sure that the griddle or skillet is well coated at all times.
- Add about 1/3 cup batter to the hot pan. Cook approximately 2-3 minutes per side. Repeat for rest of the batter.
- Serve pancakes warm with butter, syrup, whipped cream, and blackberry compote!
